Red Velvet Cake Pop

A friend of my mom made this! She makes them for friends' parties and such... I think she should quit her day job and start a cake business. This is just about the most delicious thing I've had in a long time. It's a red velvet cake pop. So delicious, moist red velvet cake inside... coated with a slightly hardened variation on the traditional cream cheese icing... and coated in rock sugar. Red Velvet cake is a little harder than some other cakes to make because it's really easy to dry it out if you're not careful (IMHO)... so this lady being able to perfect a small pop formation of it is pretty awesome.
I really feel sorry for you guys that you can't eat one. Mom brought two, one was supposed to be for Mitch. He didn't have a chance once I ate mine. (I still love you, baby, but those cake pops were destined for me!)
