I've found that using dove hair spray helps. It doesn't make your hair crusty, it leaves it nice and soft. As long as it's not too humid out, it stays :).

I always do my hair nicely in the morning, but by the time I get to work, it looks like I just let it dry on it's own. Darn humidity :(
