so, lately I really like cucumbers. It's great for hot weather like this. It was 103 degrees F this week! Also, I always think of kappa when I eat them. (They are one of my favorite weird mythical creatures... "Kappa may even befriend human beings in exchange for gifts and offerings, especially cucumbers." Well of course, cause cucumbers are awesome!
I started small with cucumber sandwiches thanks to Judy. It's pretty hard to screw those up. :D (You just soak the cucumber slices in white vinegar and sugar for a bit, and then put them with mayo on white bread.)

But Senka Cafe in Little Tokyo puts cucumber slices on their egg salad sandwiches. (SO GOOD!) So I thought I'd try. My sandwich looks pretty good... but it's missing some flavor. I'm not sure what I should try to add next time? (suggestions welcome!)
Mine is basically 4 boiled eggs + 2 tablespoons mayo + 2 tsp sweet relish + some salt and pepper. Then I put that on some lettuce and cucumber slices on bread. I don't like celery or onions really (I know, weird.)

Ah! You can try putting in mustard powder or Dijon mustard and see if that adds the flavor you're looking for.

I put a T of dijon mustard in my egg salad, along with mayo and salt and pepper to taste. Gives it a little kick. Also, you could try pitted and sliced black olives in it as well...that's how my grandma taught me to make it. ^_^

I actually use cream cheese instead of mayo when I make a cucumber sandwich.Also try adding some parsley or maybe some water crest. :D

I leave out the relish and add Sriracha chili sauce with a little bit of vinegar. It's a nice balance of sweet/hot/cool/sour.

I don't like egg salad but I love tuna. A crossover suggestion is a bit of Worcestershire sauce or steak sauce.

I don't use relish in my egg salad, but I do use mustard and paprika. Yum! Especially awesome with cucumber! (Man, I miss Japanese sandwiches too now...)

I like to salt my cucumber slices but it's a bit more time consuming as you then have to drain the slices since it draws out the water. I think the combo of savory (salt), spicy (pepper - white, if you don't want the flecks to show), sweet (sugar), and sour (vinegar) is always awesome.

Do you like chives, shallots, or spring onions? They much milder than typical onions or even garlic but I think it always adds a nice touch to egg salad.

Curry powder adds a nice dimension to egg salad too.

Then again, I'm a huge onion/garlic advocate.

I always put a little bit of sugar into my egg salad. My mom used to do it. And kewpie mayo instead of regular. I haven't heard of soaking the cucumber in a brine before making a cucumber sandwich! Gotta try that now.

When I make an egg sandwich I use a 2 teaspoons of butter/margarine, one hardboiled egg and a teaspoon of traditional English curry powder. It's delicious. I don't think I've ever seen such an egg sandwich with so many eggs in it before! How big are eggs in the US? The ones I get here in Australia are about 65 grams.

I would love a cucumber sandwich about now... damn you :-)

My roommate made cucumber sandwiches with dill and cream cheese, and for 24 hours I was walking around in the apartment practically huffing the delicious dill smell... XD But then someone used bleach wipes to clean the kitchen and the smell combined and it became gross... D:

The sandwiches were amazing, however.

Also, a few days ago I was at the St. Honore Bakery in the Costa Mesa Mitsuwa, and they had a bunch of new items, one of which was egg salad pan!!! The outside was like curry pan, and the interior was egg salad with no crunchy things in it. It was very delicious; I highly recommend it! ^_^

Miracle whip instead of mayo, a couple of drops of mustard, pepper and salt. Yum! Chopped green onions is very nice in egg salad.

My Mom, who in my opinion makes the best egg salad, says to try leaving out the relish and add chopped fresh mint or dill weed. The mint is best and very refreshing with the cucumber and egg.
