chocolate chip cookies

My late grandfather, Lowman, (her husband)... we used to call him Big Lo. He said that when Mommy Vi came to meet him in heaven, she'd have a big broken suitcase on her head strapped closed with belts. (because she would never by HERSELF something new...) and she'd be holding a big warm plate of chocolate chip cookies and calling to him, "Lowman!!".
^_^ it's a simple recipe but good.
CREAM (until fluffy):
1 3/4 stick real butter (1 stick being 4 oz OR 8 tablespoons... 1 3/4 stick of butter would be 14 tablespoons of butter or 7 oz of butter... I think...)
3/4 cup of brown sugar (firmly packed)
3/4 cup of white sugar
add 2 large eggs to the cream mixture
Dissolve 1 tsp baking soda in 1 tsp hot water. Add that to above mixture.
NOTE: you can beat the above items as long as you want and it will just make the cookies fluffier and lighter. however, beating the flour too long will make the cookies too tough.
Mix (in mixer) above mixture with :
2 1/4 cup cake flour (SIFTED) - does best with cake flour, or it won't do right
1 tsp salt (SIFT the SALT in WITH the FLOUR when you sift them)
1 tsp pure vanilla extract
If the cookies are slightly too runny (or if you do a test cookie, and they are too flat after being baked...) you can add one or two tablespoons more of cake flour.
after all that, you can optionally add one cup of nuts... and/or 10 oz chocolate chips (one bag.)
Put them on a greased or sprayed cookie sheet,... each cookie is basically a big spoonful. You can use two spoons to facilitate, one to scoop and the other to help get it off the spoon and onto the sheet.
Cook in 350 degree oven until they look a little golden brown on top. take them off the hot cookie sheet asap, without breaking them if possible and put them on wax paper to cool.
